Margaritaville grilled Shrimp


Margaritaville- a popular bar right by the beach in Montego Bay

This recipe serves 2 people.


These flavorful shrimp skewers are perfect for the summer time. Spicey, smokey, sweet and yet super light and delicious. This dish is very quick to put together and its best prepared on the grill. You can also do it in the oven or in a frying pan. Serve it alongside some rice and salad for a delicious summertime lunch/dinner.


Ingredients:

18-20 big shrimp, deshelled and cleaned

2 tsp fresh jerk marinade

200g fresh pineapple, cut and cubed

4-5 wooden skewers

Salt

Pepper

Olive oil


1.The Prep Work

Let your wooden skewers soak in water, so they won’t burn when you place them on the grill. In the meantime, wash and clean your shrimp. Make sure they are deveined and deshelled. Rinse them well with water and lime/lemon juice. Pat them dry with a paper towel and place in a bowl. Add in your jerk seasoning, salt and pepper and mix it in very well. Leave them in the marinate for a few minutes. Cut up your pineapple in thick, small cubes and set aside.


2. The Skewers

Now it is time to put together the skewers. Get the shrimp and pineapples on the skewers until you run out of space. Brush some olive oil lightly over each skewer. Place them on a hot grill and grill it for 2 minutes maximum on each side. Shrimp cooks very fast and overcooks very quickly as well. So definitely keep your eyes on the skewers. If you do this in a frying pan, add oil in a hot pan and fry them on each side on medium-high heat. In the oven you can place them for about 5 minutes on 200°C and turn them over once they get some even colour on. Your shrimp should be juicy and nicely charred and your pineapple will add a nice caramelization to it.
