After a well needed creative break, I am excited to bring you many new and fresh ideas for your kitchen! This past year I have spent most of my time in my favorite city – Kingston, Jamaica. While enjoying this diverse and beautiful place, exploring different business ventures, I got so much new inspiration for new dishes to share with you. This time it’s my Pineapple Pimento baked chicken recipe! This dish is great for dinners with family and friends and will surely bring great taste & vibes to any gathering! I recommend you serve it with mash potatoes and steamed vegetables for a lovely dinner menu, or even as a protein topping for your favorite salad! This dish is surely no traditional West Indian recipe- but it combines flavors and techniques of Caribbean cooking for a fun and new fusion experience. You could also switch the chicken for Shrimp, Salmon, or even Tofu.

Ingredients:
1 whole chicken, cleaned & spatchcocked
2 tbsp Olive oil
2 tbsp fresh green seasoning
3 cloves of garlic
1 small onion
200 g of fresh pineapple, peeled & cubed
2 scallions
1 Scotch bonnet pepper (optional)
1 tbsp of fresh pimento
2 tbsp of coconut creme
Salt to taste
Pepper to taste
1 tbsp All purpose seasoning
1. Prep Work
1. The Chicken: Wash and clean your chicken! Spatchcock the chicken & remove the spine with kitchen scissors, so you can lay it flat on a baking tray later.
The marinade: In a blender add all your fresh seasonings (green seasoning, garlic, onion, pineapple, scallion, scotch bonnet, thyme & coconut crème) and blend on highspeed until you have a smooth paste. In a separate little dish add all your powder seasonings including your pimento, all purpose seasoning, salt and pepper and mix together. Combine your powder seasoning with olive oil and the fresh seasoning blend for the most delicious fruity & flavorful marinade. You can store it in a container in your fridge/ freezer and use it for so many different dishes! In this case however pour it over your chicken and let it marinade for at least 2h in the fridge.
2. Baking
Place your marinated chicken on a lined baking tray and heat up your oven to 200 C°. Cover your chicken with aluminum foil and let it bake for 40 -50 mins on a middle rack while its covered. This ensures that the chicken stays very moist. After 40 minutes remove the cover and change the oven to a low heat on the broiler for 5 minutes. Let the chicken get some extra color and charred flavor! Let it rest for 10 minutes and then serve with your desired side dishes!
You could also try this method on the grill or even in an airfryer!
